Hazard Analysis and Critical Control Points (or HACCP) is a detailed, systematic, documented approach that identifies, evaluates, and controls quality hazards for each product-related process used by an operation. HACCP may be applied to Good Agricultural Practices (or GAP) or Good Manufacturing Practices (or GMP) requirements. The terms Hazard Control Plan (or HCP) and HACCP Plan can be used interchangeably.
